Pipián de Acamayas, Langostinos in Pumpkin Seed Sauce from Veracruz. This was an interesting dish. I know the pictures probably do not look as appetizing, it actually was really good!
The dish called for very few ingredients, mostly just the shrimp, pumpkin seeds, nopales and a couple dried chiles. I used ancho chiles and chiles de árbol so there was a tiny bit of heat.
It reminded me of a curry because it was almost nutty in flavor from the pumpkin seeds. I scooped up bites in corn tortillas may finish the rest off today.
