Yes. Mini avocado tacos. Taquitos de Cureo, miniature tacos of avocado and chicharrón. I was able to pick up some fresh chicharrón from the market down the street from me. I was definitely snacking on this while I was cooking.
The ingredients were simple. Besides the avocado and chicharrón there were onions and serrano chiles to chop. I was lazy and used pre made corn tortillas.
I rolled the little tacos and fried them in oil until they were golden and crisp. These were pretty out of control good. Andrew was outta town for this night of cooking so I ate all the taquitos myself. I will be making these again and I have to figure out a salsa that would pair well.
