I was planning on making this rice, poblano and cheese dish but upon looking into the refrigerator I saw that . . . nope . . . no poblanos. I suddenly remembered my last trip to Whole Foods and how sad and wrinkly their poblanos were and telling myself to stop by Jon’s to pick some up on the way home. Short term memory loss I guess.
I was also going to make Chilacayotes en Nata, Chilacayotes in Cream. Since I wasn’t able to get my hands on any Chilacayotes the recipe suggested I either use squash or zucchini. It was a simple dish with tomatoes, onion and garlic. I was also supposed to add créme fraiche or sour cream.
I modified and made my own with coconut cream. Looking online and seeing what I had in my pantry I added apple cider vinegar to the coconut cream along with a little salt. This created a nice and tangy cream.
Last night was a meal of randoms. Extra cans of tuna made for a quick tuna salad and I made some sweet/spicy sweet potato fries. I used the left over broth from the Birria the night before to cook the rice. Sometimes a little mix and match works out in your favor.
