Pollo en Chirmol con Bolitas de Masa from Tabasco. One of my favorites thus far. I am not completely sure why I wanted to cook a dish that called for the broiling of 5 ingredients when it was so humid over here in LA.
I broiled the chicken, tomatoes, garlic, onion and corn tortillas and continued to make the sauce along with pumpkin seeds and spices.
The masa dumplings were delicious, probably because they called for lard. I had fun perfecting my ball rolling and finger poking technique
I have some of this dish saved in my freezer for a cold day. I can’t wait.
