It’s not that I haven’t been cooking. Even with the hot temps I’m whipping up food. I’ve just been lazy on the writing part.

I didn’t use a whole fish as was recommended because I didn’t want to cook for 6 or pay for 6. I just went with filets and still got some good flavor out of them, although I’m sure it would have been even better with some heads.
I still haven’t been able to find those damn x-cat-ik chiles, but haven’t given up yet.
