I love eggs. I’ll eat em any which way, fried, scrambled, hard boiled, poached or placed on top of any other food. I’ve always told people, I could go vegan if it weren’t for eggs.

This was a totally different way of cooking eggs that I have never experienced before.

Huevos en Baturrillo, Eggs with Parsley and Lime Juice from Zacatecas. Eggs, créme fraiche, parsley and lime. So simple and really, really good.
