Huevos Al Comal, Eggs cooked with Hoja Santa on a Griddle from Veracruz.
I don’t have a griddle so I used my cast iron. This was a quick and easy breakfast. I lined the pan with the slightly oiled hoja santa leaves. I didn’t have the biggest leaves but was able to work with the little ones I did have. I cracked the eggs and left them on top and carefully folded the leaves over. I placed a lid on top and let them cook for maybe a little too long seeing as I like my yolks runny, but they still tasted great.
