Holy shit, this mole was delicious. Mole Miahuateco from Publa is a dark, rich turkey mole. There is a lot of toasting of ingredients. Toasted, plantains, raisins, semisweet egg bread, almonds, sesame seeds and a ton of mulato chiles.
All of those toasted ingredients, except for the chiles and sesame seeds go into the food processor and make a paste.
The chiles, after toasted, went into my little spice grinder to become a powder. Now, this was a ton of chiles and a tiny grinder. It took me about 20 minutes to cycle through all the chiles and I have no pictures because I was a mess, my area was a mess and I was sneezing from getting chile powder up my nose.
Next came frying the powdered chiles for 5-10 minutes, then adding the raisin/plantain mix, then the sesame, then some ground spices.
In went the chocolate, turkey broth and the turkey pieces that I had already cooked. All that sat on the stove for a long while and what came of that was the most delicious mole I’ve ever made. I have only made a couple, but this one was a winner.
